This easy edamame salad is packed crunchy veggies, fresh herbs, and tossed in a simple lemon vinaigrette.

Ingredients
- 1 lemon juiced (1/4 cup
- 2 tablespoons olive oil
- 1 - 2 teaspoon honey optional
- 1/2 teaspoon oregano
- salt kosher salt; freshly ground; to taste
- black pepper kosher salt; freshly ground; to taste
- 12 ounces edamame shelled
- 1 cup cucumber Persian, chopped
- 1 cup red bell pepper diced
- 3 green onion thinly sliced
- 1 tablespoon dill chopped, fresh
- 1 tablespoon flat leaf parsley chopped
Instructions
- In a salad bowl, whisk together the lemon juice, olive oil, dried oregano, salt and pepper.
- Add the remaining ingredients to the salad bowl and toss everything together until it's coated in the vinaigrette. Taste for seasoning and adjust if needed.
