Edamame Salad with Cilantro Lime Dressing

Edamame Salad with Cilantro Lime Dressing combines shelled edamame, corn, and fresh vegetables tossed in a tangy vinaigrette made from lime juice, avocado oil, cilantro, and honey. The salad delivers a fresh, crisp texture balanced by bright citrus flavors and herbaceous notes, serving well as a light side or vegetarian dish.

Description

This salad features cooked shelled edamame paired with steamed or sautéed corn, diced red bell pepper, finely chopped red onion, and chopped green onions. The fresh vegetables provide varied textures and colors. The cilantro lime dressing is a blend of lime juice, avocado oil, red wine vinegar, fresh cilantro, honey, sea salt, black pepper, and cumin, shaken together to create a vibrant and slightly sweet flavor that complements the mildness of the edamame and corn.

The salad can be enjoyed immediately or chilled, making it a versatile addition to meals or picnics. The ingredients provide a satisfying combination of protein, fiber, and fresh produce. Garnishing with extra cilantro enhances the herbal aroma and visual appeal.

The recipe accommodates frozen edamame pods used straight from the freezer and yields about 2 cups of shelled edamame from two 10-ounce packages. This provides a practical balance of ingredients for the salad volume.

Ingredients

Servings
  • 2 cups edamame shelled
  • 2 cups corn frozen organic
  • 1 red bell pepper
  • ½ cup onion red, finely chopped
  • cup green onion plus extra to taste, chopped
  • cilantro to garnish

CILANTRO LIME DRESSING

  • 3 TBSP lime juice (2 limes)
  • ¼ cup avocado oil (or light olive oil)
  • 1 TBSP red wine vinegar
  • ¼ cup cilantro plus extra for topping, fresh leaves
  • 2 tsp honey or agave/sugar if vegan
  • ½ tsp salt sea salt
  • tsp black pepper
  • tsp cumin

Instructions

  1. Cook edamame per package instructions and, if using edamame pods in place of shelled edamame, simply pop the soy beans out into a bowl. I do the latter and it goes crazy quick, if you can refrain from eating them all while shelling them.
  2. While your edamame boils, cook corn by steaming or sautéing. You can 100% use fresh instead of frozen if desired!
  3. Chop your bell pepper, red onion, and green onion and combine with edamame and corn.
  4. To make the cilantro lime vinaigrette, combine all the above ingredients in a small mason jar and shake well. Pour over salad and toss to combine. Add a little extra cilantro to garnish (as much or as little as you'd like!) and dig in! Salad may be chilled before serving if desired <-- it's extra tasty both ways!

Notes

  • Keep frozen organic non-shelled edamame pods in the freezer to have quick, fresh edamame ready by shelling when needed.
  • Two 10-ounce packages of unshelled edamame yield approximately 2 cups of shelled beans, ideal for this salad portion.
