  • 3 cups olive assorted, pitted or unpitted, about 1/2 cup per person, seek out a good colorful assortment
  • 1 cup feta cheese cut in small bite sized cubes
  • 1-2 jalapeno pepper red or green, thinly sliced, seeds and all, optional
  • lemon juice of 1
  • thyme handful, fresh
  • salt fresh cracked, to taste
  • black pepper fresh cracked, to taste
  • 3 Tbsp olive oil good quality
  • 2 Tbsp red wine vinegar good quality, or sherry vinegar

Instructions

  1. Set oven to 400F
  2. Spread the olives out in a casserole dish or gratin dish. Toss with all the rest of the ingredients and taste the dressing to adjust any of the elements.
  3. Bake for about 20 minutes until bubbling.
  4. Replace the roasted thyme with fresh sprigs, and serve hot with crusty bread.

  • Adjust ingredient amounts by eye to taste and serving size.
