Description
The Egg and Greens Protein Bowl features Swiss chard gently sautéed with chopped garlic until wilted but still tender. Ingredients
- 2 ½ cups swiss chard or other greens
- 1 tablespoon olive oil or coconut oil
- 2 cloves garlic chopped
- ½ cup vegetables roasted; butternut squash used; optional
- 2 egg Happy Egg Co. Free-est of the Free Range brand
- salt to taste
- black pepper to taste
Instructions
- Heat olive oil over medium high heat. Add garlic and saute a minute or two. Add greens and stir gently. Cook until wilted.
- Place greens in a bowl. Add a little more olive oil and Crack Free Range Eggs in a skillet. Fry until done to your liking.
- Put warm eggs on top of greens and add any roasted vegetables. Salt and pepper to taste.
