Ingredients

Servings
  • 2 ½ cups swiss chard or other greens
  • 1 tablespoon olive oil or coconut oil
  • 2 cloves garlic chopped
  • ½ cup vegetables roasted; butternut squash used; optional
  • 2 egg Happy Egg Co. Free-est of the Free Range brand
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat olive oil over medium high heat.  Add garlic and saute a minute or two.  Add greens and stir gently.  Cook until wilted.
  2. Place greens in a bowl.  Add a little more olive oil and Crack Free Range Eggs in a skillet.  Fry until done to your liking.  
  3. Put warm eggs on top of greens and add any roasted vegetables.  Salt and pepper to taste.
