Eggless Banana Bread

  • 1 1/2 cups banana about 3-4 medium bananas, mashed ripe
  • 1/2 cup brown sugar soft
  • 1/3 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 cup walnuts optional, chopped, or pecans

Instructions

  1. Preheat your oven to a toasty 350°F. Grab a 9 x 5-inch loaf pan and line it with parchment paper for an easy release. Lightly grease with coconut oil.
  2. To the mashed bananas, add the brown sugar, melted coconut oil, vanilla extract, and salt. Stir until well combined.
  3. In a separate bowl, whisk together the whole-wheat flour, baking powder, baking soda, and cinnamon.
  4. Gently fold the dry ingredients into the wet. Stir until just combined, do not overmix.
  5. Add chopped walnuts or pecans (optional).
  6. Pour the batter into your prepared pan and smooth the top. Pop it in the oven and bake for about 50 to 55 minutes. If the top is getting too brown, tent it with foil around the halfway mark.
  7. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
