Eggless S'mores Cookie Dough

This eggless cookie dough combines softened unsalted butter with a blend of granulated and brown sugars for a light, fluffy base. It features finely ground graham cracker crumbs and all-purpose flour, creating a sweet, crumbly texture reminiscent of s'mores. Mini semisweet chocolate chips and mini marshmallows stir in to add pockets of melted sweetness and chewiness. Since it contains no eggs, it's safe to eat raw and works well as a dip or snack dough.

Description

Eggless S'mores Cookie Dough merges the classic s'mores flavors into a safe-to-eat raw cookie dough without eggs. The dough starts by creaming butter with sugars until fluffy, ensuring a light texture. Adding water and vanilla extract builds flavor and moisture. The combination of all-purpose flour with finely crushed graham cracker crumbs provides a crumbly, slightly crunchy structure that mimics the graham cracker component of s'mores. Mini semisweet chocolate chips distribute melted bursts of chocolate throughout, while mini marshmallows add occasional chew and sweetness. The absence of eggs makes it suitable for eating uncooked, ideal for spooning or dipping.

This dough is often served as an indulgent snack or dessert ingredient that requires no baking. Since it contains dairy and raw flour, refrigeration is recommended if not eaten immediately, and consumption should be mindful of storage time. The recipe skips eggs and uses water, making the dough less sticky and perfect for edible raw cookie dough lovers looking to enjoy s'mores flavors in a convenient form.

Ingredients

Servings
  • 1 butter stick, softened, unsalted
  • 2 tbsp granulated sugar
  • 1/3 cup brown sugar packed
  • 2 tbsp water (you can use milk if you want, but I like leaving these out at room temperature)
  • 1 tsp vanilla extract
  • 1/2 cups all-purpose flour
  • 3/4 cup graham cracker crumbs , as finely as you can get them, to an almost flour consistency
  • 1/4 teaspoon kosher salt
  • 1/2 cup mini semisweet chocolate chips
  • 1/2 cup mini marshmallows for cereal

Instructions

  1. In a bowl with a mixer or a stand mixer, cream the butter and sugars. until they are noticeably lighter in color and very fluffy. This usually takes a couple of minutes.
  2. Add in water and vanilla and mix for a couple of seconds.
  3. Add in flour, salt and chocolate chips and mix until all combined.
  4. The chips are so small they won't break apart in there. If you are worried or use an alternate type of mix in that is more fragile, use a spatula or whisk to incorporate the mix-ins.
