Eggnog Christmas Cookies

  • 1 egg
  • 3/4 cup sugar fine
  • 5 tbsp rum
  • 4 tbsp milk
  • 1/2 cup butter softened, unsalted
  • 1 tbsp vanilla extract
  • 2 egg yolk
  • 2-1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 3/4 tsp allspice
  • 1-1/2 cups confectioners sugar

Instructions

  1. 1- Preheat oven to 160C/325F. Grease or spray the cookie sheets with butter or oil. to prepare for the eggnog cookie batter , mix together the eggs then add only 2 tablespoons of the fine sugar, the rum and milk and beat till frothy. Set aside.
  2. 2- In a separate bowl mix the remaining fine sugar and the butter and hold back 1 tablespoon of the butter until smooth and fluffy. Add in the vanilla extract and egg yolks and continue mixing till smooth.
  3. 3- Sift the baking powder and all purpose flour together 2-3 times, add the all spice and sift one last time. Ad only half a cup of the eggnog mixture to the flour blend and mix just until all ingredient are combined.
  4. 4- Using a small ice cream scoop, scoop the eggnog cookies batter onto the greased baking tray about one and a half inch apart. Flatten them slightly with damp fingers and bake in preheated oven for approximately 25 minutes or until bottom of cookies are golden brown.
  5. Once baking is complete let cool for a few minutes and transfer to a wire rack, cookies should be completely cooled in approximately 20-30 minutes.
  6. In the mean time you can prepare the frosting. Add the confectioners sugar, remaining 1 tablespoon of butter and the remaining eggnog mixture to make the soft frosting.
  7. Once eggnog cookies are completed cooled spread the eggnog frosting onto the top. Sprinkle the tops with some cinnamon or nutmeg.
