Eggplant Roll Up Appetizer (Slavic Verison)
Description
Eggplant Roll Up Appetizer (Slavic Version) uses medium eggplants sliced thin and softened by baking or broiling, which creates a tender base for the rolls. The filling combines grated carrots and onions cooked with tomato paste and mayonnaise, adding moisture and depth, while minced garlic infuses a fragrant bite. After seasoning with salt and pepper, the mixture is spread onto the eggplant slices and rolled up, either as spirals or folded rounds, depending on the cut.
This appetizer can be served cold, offering a mild, balanced flavor from the combination of sautéed vegetables and tangy tomato paste enhanced by garlic. The preparation allows for easy make-ahead refrigeration, useful for planning small gatherings or as a light, vegetable-focused snack.
As a no-meat option that showcases the textures of softened eggplant and the vibrant filling, this appetizer is suited for those looking to try a taste inspired by Slavic home cooking traditions.
