Ingredients
- 1 cup rolled oats quick-cooking
- 1 cup coconut shredded
- ½ cup Flaxseed milled
- ½ cup mini chocolate chips (optional)
- ¼ cup protein powder (optional)
- ½ cup peanut butter creamy natural
- ⅓ cup honey
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine oats, coconut, flaxseed, chocolate chips, and protein powder and mix together.
- Add peanut butter, honey, and vanilla and mix well (I often use my hands to mix to make sure everything is combined). Refrigerate for 30 minutes.
- Once chilled, use a small cookie scoop to scoop out the mixture and use your hands to help roll it into small, bite-sized balls.
- Store in an airtight container in the refrigerator. Separate the layers with parchment or wax paper.
Notes
- Make ahead and store energy balls refrigerated for 1–2 weeks or frozen for up to 3 months.
- Allow frozen balls to thaw before eating to restore soft texture.
- Substitute different chips such as white chocolate or butterscotch to vary flavor.
