Description
The recipe starts with quickly boiling fresh English peas for 90 seconds to 2 minutes, then shocking them in ice water to preserve color and texture. After drying, the peas are combined with crumbled blue cheese and bacon bits for bold and smoky notes. The dressing is created by blending mayonnaise, sour cream, diced red onion, dill, salt, and pepper, which adds creaminess and herbaceous flavor.

Ingredients
- 20 oz English peas fresh, shelled
- 2 oz blue cheese crumbled
- 1/2 cup Bacon crumbled
- 1/4 cup red onion diced
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- salt to taste
- black pepper to taste
- 1 tsp dill dried
Instructions
- Bring pot of water to boil. Salt water and add in peas. Cook 90 seconds to 2 minutes. Drain and submerge into ice water. Drain again and pour onto clean dish towels to dry. As you dry peas, sort through them to remove any brown peas or random debris, like stalks and leaves. Pour peas into large bowl. Add in cheese and bacon.
- For the dressing, stir mayonnaise, sour cream, red onion, salt, pepper and dill together until smooth. Pour over peas and stir to coat. Either serve immediately or chill in refrigerator until ready to serve.
Notes
- If fresh peas are unavailable, use frozen peas and defrost quickly under warm water, then rinse with cold water and dry before adding to the salad.
- Defrosting peas in the refrigerator overnight is also an option, but ensure peas are rinsed and dried before use.
- No need to blanch frozen peas since they do not require additional cooking for this recipe.
