  • ½ cup ricotta cheese part-skim
  • ¼ cup cottage cheese low fat
  • ¼ cup jalapeños finely chopped, pickled
  • 2 Tablespoons pickled jalapeno juice
  • kosher salt fresh, to taste
  • black pepper fresh, to taste
  • 3 teaspoons thyme chives, or rosemary work too, fresh

Instructions

  1. In a medium bowl, place all of the ingredients. Using a fork or spatula, mix everything together until combined. 
  2. Add kosher salt & fresh pepper to taste. 
  3. Serve over tostadas, toast, or as a side dish for your favorite main dish. Top with avocado and herbs.
