  • 1 lb carrot about 6-7 medium size carrots, peeled, boiled and diced
  • 8 oz peas about 1 cup, boiled for less than 3 minutes, or corn
  • 6 celery finely diced, about 1 cup, stalks
  • 1- 2 apple peeled and diced
  • 1 cup onion about ½ onion, white, diced
  • lime juice from 1-2 limes
  • 1 garlic crushed, small clove
  • 1 cup mayonnaise homemade
  • 1 tbs cilantro or parsley or dill, finely chopped
  • salt to taste

Instructions

  1. Mix all of the ingredients together, chill until ready to serve.
