Ingredients
- 3 ½ lbs russet potato about 4 large potatoes, peeled, boiled and diced
- 1 lb carrot about 6-7 medium size carrots, peeled, boiled and diced
- 8 oz peas about 1 cup, boiled for less than 3 minutes, or corn
- 6 celery finely diced, about 1 cup, stalks
- 1- 2 apple peeled and diced
- 1 cup onion about ½ onion, white, diced
- lime juice from 1-2 limes
- 1 garlic crushed, small clove
- 1 cup mayonnaise homemade
- 1 tbs cilantro or parsley or dill, finely chopped
- salt to taste
