Ensaladang Pipino
Description
The salad combines thinly sliced cucumbers and red onions with a vinaigrette composed of vinegar, fish sauce, sesame oil, sugar, salt, Thai chili, and freshly cracked peppercorns. The vinegar and fish sauce provide a sharp and savory base, while the sugar softens the acidity. The minced chili adds heat, balanced by the nutty sesame oil aroma. The ingredients are gently tossed then chilled to meld flavors and crisp the vegetables.
This salad offers a refreshing, slightly spicy accompaniment often served alongside heavier or grilled dishes in Filipino cuisine. Using a mandoline for slicing ensures even, crisp pieces. Adjusting cucumber skin thickness can modify texture and bitterness to preference.
Ingredients
- ½ cup vinegar
- 2 tablespoons fish sauce
- 1 teaspoon sesame oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 Thai Chili pepper minced
- ½ teaspoon peppercorn freshly cracked
- 2 cucumber washed and sliced thinly, large
- 1 red onion peeled and sliced thinly
Instructions
- In a small bowl, combine vinegar, fish sauce, sesame oil, chilis, sugar, salt and peppercorns. Whisk together until sugar is dissolved.
- In a large bowl, combine cucumber and onions.
- Add vinegar mixture and toss gently.
- Chill in the refrigerator to allow flavors to meld.
Notes
- Using a mandoline slicer helps achieve uniform thin cucumber and onion slices for even texture.
- Cucumber skin can be left on, peeled partially in strips, or peeled completely based on the variety and desired texture.
