Epis Recipe

Epis is a flavorful herb and spice blend used as a seasoning base in Haitian cooking. This recipe blends scallions, fresh thyme, parsley, green and red bell peppers, garlic, olive oil, and whole cloves with a crumbled chicken bouillon cube to create a smooth, aromatic paste. Adjusting water quantity controls the consistency for easier blending or spreading.

Description

The Epis recipe combines a variety of fresh herbs and aromatic vegetables, including scallions, thyme, parsley, and bell peppers, with garlic and cloves to produce a robust flavor foundation. Olive oil adds richness, while a crumbled chicken bouillon cube imparts savory depth. Using whole cloves provides a sharpness that is distinctive to this preparation.

All ingredients are blended together until smooth, creating a paste that can be used to season meats, stews, and other dishes by infusing them with vibrant herbaceous notes. Water may be added sparingly to adjust thickness, ensuring the epis achieves a consistency suitable for different culinary uses.

This seasoning paste is versatile in Haitian cuisine and can be stored for regular use in cooking to build balanced and layered flavors.
