An espresso is a very strong coffee with a wonderful aroma, obtained by percolation under high pressure (9 bars minimum).

Ingredients
- 2 teaspoons strong ground coffee
- 1 oz. water
Equipment
- Coffee machine
- Espresso cup
Instructions
- Place the dose of ground coffee in the filter holder of a high pressure percolator of at least 9 bars.
- The water inlet temperature in the filter holder must be at 190 F (88°C).
- Start the coffee extraction which should be done in 25 seconds (+ or - 5 seconds).
- The espresso cup temperature should then be around 153 F (67°C).
- Enjoy immediately.
