Salad:

  • 5 cups green cabbage shredded
  • 2 cups red cabbage or more green, shredded
  • 1 cup carrot or more cabbage, shredded

Dressing:

  • 1/4 cup cider vinegar
  • 2 tbsp vegetable oil or canola or light olive oil
  • 1 1/2 - 2 tbsp white sugar adjust to taste
  • 1 tsp Dijon mustard
  • 1/2 tsp salt

Instructions

  1. Shake Dressing ingredients in a jar. Start with 1 1/2 tbsp sugar and adjust to taste.
  2. Place Salad ingredients in a large bowl. Pour over Dressing, toss. Set aside 20 minutes - mound will reduce by almost half and become juicy! Serve.

Notes

  • Store chopped cabbage and dressing separately in the fridge for up to one week, combining when ready to serve.
  • Adding garlic to the dressing limits its storage life to about three days once combined.
  • Use this salad as a side to roasted or grilled dishes; it pairs well with diverse cuisines.
  • Letting the salad rest after dressing reduces volume and softens the cabbage, improving texture and juiciness.
