Everything Bagel Cream Cheese Bites
Description
Everything Bagel Cream Cheese Bites transform frozen dinner rolls into bagel-like snacks by partially proofing and flattening the dough before filling. The cream cheese center provides a creamy contrast to the chewy, slightly dense dough exterior that mimics the texture of an everything bagel. The bites are folded, sealed, and brushed with an egg wash to help the everything bagel seasoning stick and develop a golden crust during baking.
Baked at 350°F until lightly golden, these bites balance a soft interior texture with a flavorful seasoned crust. The everything bagel seasoning adds savory notes of sesame, poppy seeds, onion, and garlic, enhancing the cream cheese filling.
This recipe serves as a versatile base for variations. You can add jam for sweetness, mix cheddar and scallions with the cream cheese for a savory twist, sprinkle cinnamon sugar for a sweet-spiced version, or make Nutella-stuffed bites for a chocolate treat. They are ideal for breakfast, snacks, or appetizers served warm.
Handling the dough gently to seal the filling securely ensures the creamy center stays enclosed while baking. Slight under-proofing maintains denser dough closer to bagel texture rather than a fluffy roll.
Ingredients
- 12 to 18 dinner rolls Rhodes, frozen
- 8 ounce pkg cream cheese
- 1 large egg
- everything bagel seasoning
Instructions
- Start by spraying a regular-sized muffin tin with non-stick cooking spray. Place one roll in each tin and let the rolls rise for 1 hour.
- Once the rolls have partially risen (you don't want them to fully rise into a roll or they will be too fluffy. We want them denser to be more similar to a bagel texture), press each one with the palm of your hand to make a circle about 3 1/2 inches to 4 inches in diameter.
- Place a generous amount of cream cheese in the center and spread with a knife. Fold each corner into the center to make a ball, pinching to seal any openings, and roll it into a ball.
- Place each roll back into the muffin tin, smooth side up. Check to make sure it is sealed.
- Make an egg wash by whisking together the egg and brushing it on each roll. Generously sprinkle with everything bagel seasoning.
- Bake at 350 degrees for about 14-16 minutes or until a light golden brown color. Serve warm.
Notes
- Ensure rolls are only partially risen before shaping to keep a denser, bagel-like texture.
- Seal each dough ball carefully to prevent cream cheese from leaking during baking.
- Experiment with fillings such as jam, cheddar with scallions, cinnamon sugar, or Nutella for flavor variety.
- Brush with egg wash to help seasoning stick and develop a golden crust.
