Description
The sourdough discard crackers are made by combining the starter discard with melted butter, spreading the mixture evenly on a parchment-lined sheet pan. Everything But The Bagel seasoning sprinkled on top adds a mix of sesame seeds, garlic, onion, and salt to replicate the classic bagel flavor. Baking at 350°F creates a golden, crisp texture. Scoring after initial baking helps form uniform crackers that break easily once cool.
The crackers have a light crunch with flavorful seasoning. Thickness can be adjusted by spreading the dough thinner or thicker before baking; thinner edges crisp more easily but risk burning, so attention during baking is advisable. The final product is a handy use for sourdough discard, transforming it from a waste ingredient into a flavorful and crunchy snack.
A pinch of extra salt may be added for those who prefer more seasoned crackers. This recipe delivers a simple way to utilize leftover sourdough starter and yield a distinctive seasoned cracker.
Ingredients
- 1 cup sourdough starter 227 grams, discard
- 3 tbsp butter melted, 43 grams, unsalted
- 2-4 tsp everything but the bagel seasoning
Instructions
- Combine the sourdough discard with the melted butter. It’ll look a little odd at first but trust in the process! Keep stirring.
- On a parchment lined sheet pan, use a spoon or spatula to spread out the mixture evenly, making sure that the edges aren’t too thin as it’ll burn.
- Sprinkle on the everything but the bagel seasoning and bake in a 350F oven for 10 minutes.
- Remove the sheet pan and lightly score the mixture so you can easily break it into crackers later. I chose to score mine into 24 small pieces. You can score it into larger 12 pieces or whatever amount you’d prefer.
- Place it back in the oven and bake for another 25-30 minutes or until golden, keeping an eye on it to ensure nothing burns.
- When done, let it cool until it’s cool to touch then break up the crackers into the squares you scored earlier.
Notes
- If crackers are thicker than desired, add a pinch of salt to enhance flavor balance.
