Everything Flatbread Crackers
Description
Starting with a mix of whole wheat pastry and all-purpose flour, sugar, and salt, cold butter is pulsed into crumbly bits in a food processor. Milk is added gradually to form a dough that is refrigerated to chill and firm up. Rolled very thin, the dough is transferred to a baking sheet. A beaten egg is brushed on top to help the seasoning adhere.
The seasoning blend combines poppy seeds, sesame seeds, minced onion, garlic powder, sea salt, and cracked black pepper, pressed slightly onto the dough. Baking begins at 350°F in two intervals, with rotation to ensure even baking, then continued in short bursts until crisply golden. The crackers have a crunchy texture with a toasty and aromatic flavor contributed by the seasoning mix and touch of butter in the dough.
These crackers are versatile for snack time or to accompany cheese and vegetables, providing a flaky but sturdy base. Their distinct seasoning mimics classic "everything" bagel toppings in a cracker form, adding complexity to the snack experience.
