Ingredients

Servings
  • 2 tablespoons butter unsalted
  • 1 medium green chili pepper chopped, seeded if desired
  • 2 cloves garlic finely chopped
  • 2 cans corn drained, whole-kernel
  • 2 cups cream cheese
  • 3/4 cup mozzarella cheese shredded
  • 3/4 cup cheddar cheese shredded
  • 1/2 teaspoon salt
  • 1/3 teaspoon black pepper ground
  • 1/2 cup bread crumbs
  • 1/2 cup thyme finely chopped, or sage or parsley

Instructions

  1. Preheat the oven to 375°F (190°C). Melt the butter in a skillet over medium heat. Add the chopped green chili pepper and garlic, and stir-fry for 3 to 5 minutes, until fragrant. Add the whole-kernel corn, cream cheese, and half of the shredded mozzarella cheese, along with the cheddar cheese. Stir constantly until the cheese melts. Season with salt and ground black pepper to taste.
  2. Pour the corn mixture into a butter-greased 9x13-inch (23x33 cm) baking dish, and smooth the surface evenly with a spatula. Top with breadcrumbs, the remaining shredded mozzarella cheese, and freshly chopped herbs.
  3. Bake the corn casserole for 25 to 30 minutes, or until the cheese is melted and crisp on top. Serve immediately, garnished with additional freshly chopped herbs or green onions.

Notes

  • Recipe Source: Bon Appetit
  • Whether you use fresh, frozen, or canned corn, the result is a harmonious blend of corn's natural sweetness and the luxurious embrace of cheese. If using fresh corn, cut approximately 6 cups of corn from the cob.
  • For cheese options, you may choose any cheese that melts well. For example, parmesan cheese, Monterey jack, pepper jack, or even a mix and match of various cheeses to create a rich and unique flavor for the dish.
  • You may always adjust the heat of this dish by adding more or less green chili peppers.
