Falafel Waffles
Description
Falafel Waffles transform the traditional falafel ingredients into a batter cooked in a waffle iron. The oats are first ground finely, providing structure without the need for flour, while chickpeas offer protein and classic falafel flavor. The addition of red onion, garlic, and fresh herbs infuse the mixture with freshness and depth, complemented by cumin and a hint of cayenne for warmth. Cooking in the waffle maker crisps the outside while keeping some texture inside, avoiding overprocessing to retain a pleasing bite.
The waffles are served topped with tahini and hummus, adding creamy and nutty layers to complement the crispy exterior. This dish works well as a breakfast, snack, or light meal component, pairing naturally with fresh salads or as a component in Middle Eastern-inspired dishes.
The falafel batter can be pulsed to a loaf-like consistency, taking care not to overblend, preserving some pea and oat texture. Lightly oiling the waffle iron ensures even cooking and prevents sticking. The method offers a less oily alternative to deep-fried falafel while maintaining signature flavors.
Ingredients
- ½ cup oats
- 2 chickpeas drained and rinsed, canned, 14oz / 400ml cans
- ½ red onion peeled and chopped
- 3 cloves garlic chopped
- parsley roughly chopped, fresh, handful
- cilantro roughly chopped, fresh, aka coriander
- 2 tablespoon tahini
- 2 tablespoon olive oil plus extra for wafflemaker
- 2 tablespoon lemon juice
- 1 teaspoon cumin ground
- cayenne pepper small pinch
- salt
- black pepper
To serve:
- tahini

Instructions
- Whiz the oats first in a food processor until fine.
- Add remaining ingredients and pulse until it forms a ball, scraping down the sides if necessary. Don't overmix as a bit of texture is nice in the finished falafel waffles.
- Heat the waffle iron and brush or spray with a small amount of oil.
- Spoon the falafel mixture into the grids, close and cook for 4 minutes or as directed on your machine.
- Remove and serve topped with tahini and hummus.
