Fall Brussels Sprout Salad with Apple, Pecans, and Blue Cheese

This Fall Brussels Sprout Salad marries thinly shredded brussels sprouts with crisp apple matchsticks, crunchy pecans, and crumbled blue cheese. A dressing made from olive oil, Dijon mustard, minced shallot, and balsamic vinegar coats the vegetables, balancing sharpness and sweetness. The salad offers a blend of crunchy textures and tangy, savory flavors, suitable for a seasonal side dish.

Description

The salad features fresh Brussels sprouts shredded thinly to soften their texture while retaining crunch. The addition of diced sweet apple adds crispness and fruity brightness, complementing the robust flavor of the sprouts. Pecans contribute a nutty crunch, and blue cheese offers creamy, pungent sharpness to contrast the fresh ingredients.

The dressing combines extra virgin olive oil, Dijon mustard, minced shallots, and balsamic vinegar, whisked together and seasoned with salt and pepper. This dressing lightly coats the salad, imparting tangy and savory notes that enhance the natural flavors without overpowering them. Mixing the salad just before serving preserves the textures and freshness.

This salad pairs well with roasted meats or as part of a fall-themed meal. For a cooked variation, the Brussels sprouts can be sautéed in oil before incorporating into the salad, which mellows their bitterness and softens their texture slightly.
