Instructions

MAKE THE BBQ SAUCE

  1. Put all the ingredients in a small saucepan and stir together. Bring to the boil then reduce heat to a low simmer. Cook for 10 minutes, stirring occasionally, until the sauce is slightly thickened. Set aside to cool – this can be prepared in advance and kept in the fridge in a sealed jar.

PREP THE RIBS

  1. Dry the ribs using paper towels and place on a platter bone side up. Use a knife to get under the thin membrane that covers the bony side of the ribs and pull it off.
  2. Combine all the dry rub ingredients in a bowl. Brush the ribs with oil and sprinkle the rub over both sides.
  3. Line a baking tray with a large piece of aluminum foil and drizzle with a little oil. Place the ribs on top, bone side down, and wrap them tightly in the foil.

BAKE THE RIBS

  1. Preheat the oven to 180°C (350°F) and bake the ribs for 2 hours.
  2. Unwrap the foil parcel and slather the barbecue sauce over the ribs. Increase the oven temperature to 200°C (400°F) and set to grill (or broil). Cook for a further 5-10 minutes to get crisp edges.

REST AND SERVE

  1. Rest the ribs for 10 minutes then slice and serve with your best sides plus some extra barbecue sauce. Finger licking good!

Notes
