Corn Ribs are a super tasty and fun way to enjoy corn season this summer! They are sweet, slightly chewy, packed with flavor, and make for a delicious finger food or appetizer. We love to dip them in a spicy avocado crema and it contrasts the tastes beautifully! Make sure to try this Corn Ribs recipe before the summer ends!

Ingredients
Corn
- 3 fresh whole corn on the cob peeled.
- 1 tablespoon olive oil
- 2 1/2 teaspoons chilli powder
Avocado Crema
- 2/3 cup greek yogurt or sour cream
- 1 large Hass avocado or 2 smaller ones pitted and peeled
- 1/2 teaspoon salt
- 1 Jalapeño
- 1 clove garlic
- Juice of 2 limes
- 1/4 cup cilantro leaves
Notes
- Fresh seasonal summer corn is the BEST so make sure you try this corn ribs recipe in the summer.
- Cutting the corn is the hardest part of this recipe, so make sure you start by trimming it.
- Trim it so well that when you have it upright on a cooking board, it doesn't feel shaky at all. Only then, beging cutting it up.
- Use a sharp knife, and use your other hand to tap on the knife for a firmer cut.
- Season the ribs with any spice blend you like, or keep it simple with just salt.
- You can use olive oil or avocado oil or any type of oil here, as long as you use oil.
- While you can cook corn ribs in the oven, stove top and air fryer, we prefer using the grill. The flavor of grilled corn is our opinion is just unbeatable!
- Serve this with any dip you like, or sprinkle some cilantro on top and enjoy right away.
- Leftovers reheat so beautifully in the air fryer. Reheat for 3-4 minutes at 350 degrees F and they taste just as fresh.
- You're not supposed to eat the whole corn rib. Its too tough.
