Family-Famous Mexican Bean Salad
Description
The Family-Famous Mexican Bean Salad brings together canned pinto or kidney beans, black beans, and corn, all drained and rinsed. Fresh diced red bell pepper, finely chopped red onion, jalapeños, and cilantro add fresh, vibrant flavors and slight heat. The dressing, a simple blend of white vinegar, vegetable oil, sugar, cumin, salt, and black pepper, provides acidity and warmth characteristic of Mexican-style salads.
The salad is tossed to coat all ingredients evenly, and refrigerating for about an hour helps meld the flavors and soften the sharpness of raw onion and jalapeños, while maintaining a crisp texture. It offers a balance of tang, mild spice, and fresh herbs with the hearty texture of beans and corn.
This salad is a versatile side dish suitable for barbecues, potlucks, or picnics, and can be stored in an airtight container in the refrigerator for several days. Freezing is not recommended as texture and flavor suffer.
Dried beans may be used if soaked and cooked in advance. Proper rinsing of canned beans reduces excess sodium and preserves the salad's bright flavors.

- ½ cup white vinegar 120 mL
- ¼ cup vegetable oil 60 mL
- 1 Tbsp sugar
- 2 tsp cumin ground

Notes
