Farmer's Casserole

Farmer's Casserole combines frozen hash browns, cooked diced ham, Monterey Jack cheese, and green onions baked in a mixture of eggs and evaporated milk. The result is a savory, custard-like potato bake featuring tender potatoes and melted cheese with the saltiness of ham balanced by mild seasoning.

Description

This Farmer's Casserole layers frozen hash browns in a greased baking dish topped with diced cooked ham, shredded Monterey Jack cheese, and green onions. A beaten egg and evaporated milk mixture seasoned with black pepper and salt is poured over the layered ingredients which bind everything together during baking.

Baked at 350°F for approximately 40 to 45 minutes until set and lightly golden, the casserole achieves a creamy, custard-like interior while the potatoes remain tender but intact. If prepared in advance and refrigerated, the bake time is extended slightly to ensure thorough heating.

This dish can easily serve eight portions and is suitable for a breakfast or brunch table, or as a hearty side for lunch or dinner. It delivers comfort with familiar ingredients and simple preparation.

  • ¼ cup green onions chopped
  • 4 egg beaten
  • 12 ounces evaporated milk
  • ¼ teaspoon black pepper
