Farro Salad
Description
The Farro Salad brings together a variety of fresh and cooked ingredients for a textured, flavorful dish centered on chewy cooked farro. Peppery arugula and slightly bitter radicchio contrast with crisp apple slices and sweet dates, while fresh parsley and thyme add herbal brightness. Chopped walnuts introduce crunch, complemented by the salty, nutty flavor of shaved pecorino cheese. Tossed in apple cider vinegar with salt and pepper, this grain salad balances sweet, tart, nutty, and savory notes with refreshing freshness throughout.
The salad is served cold or at room temperature, making it a versatile side or standalone dish for warm weather meals or packed lunches. The ingredients’ contrasting textures—from tender farro to crisp apple and crunchy nuts—offer interest in every bite.
Ingredients like fresh herbs and high-quality pecorino cheese contribute distinctive aromas and flavor, while the simple apple cider vinegar dressing helps marry the components without overpowering any single element. Adjusting the dressing amount after tossing allows for personalized acidity and seasoning levels.
