Farro Soup

This Farro Soup is filled with nourishing herbs, carrots, garlic, lemongrass, meaty mushrooms, and hearty farro.

Ingredients

Servings
  • ¼ cup extra virgin olive oil
  • 1 cup red onion about 1 small onion, small-diced
  • ¾ cup carrot about 2 medium-sized carrots, small-diced
  • 8 oz white button mushroom thin-sliced, or Baby Bella mushroom
  • 1 ½ cup farro
  • ¼ cup parsley freshly chopped
  • ¼ cup cilantro freshly chopped
  • 1 tbsp basil freshly chopped leaves
  • 1 tbsp lemongrass or use the paste, freshly chopped
  • 1 tbsp ginger skin peeled, chopped
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 8 cups water or low-sodium vegetable broth
  • 1 tsp kosher salt
  • black pepper to taste

FOR SERVING:

  • lemon juice optional
  • parsley optional, chopped
  • cilantro optional, chopped
  • basil optional, chopped

Instructions

  1. In a large soup pot, over medium-high heat, add the olive oil, onions, mushrooms, salt, and pepper, and sauté until the onions and mushrooms have softened. 
  2. Next, add the lemongrass, garlic, ginger, carrots, smoked paprika, and cook for an additional 30 seconds. 
  3. When ready, add the farro, cilantro, parsley, basil, and 8 cups of water or any low-sodium broth of choice.
  4. Cover the pot with a lid, reduce the heat to medium-low, and cook until the carrots have softened and the farro has doubled in size, about 30 minutes.
  5. Finally, I like to add a squeeze of lemon juice, and more fresh chopped parsley, cilantro, and basil right at the end. This adds a nice fresh finish. 
  6. Enjoy while it's hot.

Notes

  • Do you like spicy soup? Serve a bowl with dried red chili flakes, or thin-sliced circles of jalapeno peppers. 
  • Do you not like cilantro? Add fresh mint instead.
  • One of the best ingredients in this farro soup is the lemongrass, so don't skip it!
  • Note: the farro will enlarge over time so enjoy right away.
