Fat Ronnie’s Deep Fried Fresh Mushrooms

Fat Ronnie's recipe for deep-fried fresh mushrooms features a crispy, seasoned flour and buttermilk batter that coats cleaned, stem-removed mushrooms. These mushrooms are fried until golden brown in hot oil, resulting in a crunchy exterior and tender interior. The double-dip method in flour and buttermilk helps the batter adhere well for a flavorful, crisp fry.

Description

This recipe combines fresh mushrooms that have been washed, dried, and had their stems removed, coated in a seasoned flour mixture containing salt, black pepper, and baking powder. The mushrooms are first dredged in the flour, then dipped in buttermilk, and coated again in flour to create a thick batter. Deep frying at 375°F cooks the mushrooms quickly for about 1 to 2 minutes, yielding a crunchy, golden exterior with a juicy, tender interior. Stirring and flipping during frying ensures even browning on all sides.

The finished mushrooms should be drained on a wire rack to preserve crispiness and remove excess oil. The use of baking powder in the flour mix helps achieve a light, crisp coating. If the buttermilk becomes too thick, a small amount of water can be added to thin it out for easier coating. These fried mushrooms work well as a snack or appetizer.

Ingredients

Servings
  • 2 cups flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon baking powder
  • 1 cup buttermilk
  • 8 ounces mushrooms washed, dried, and stems removed, fresh
  • vegetable oil for frying

Instructions

  1. Preheat vegetable oil to 375 degrees.
  2. Mix flour, salt, pepper, and baking powder in a bowl.
  3. Place buttermilk into a bowl.

Battering mushrooms

  1. Dip into the seasoned flour, shake off excess flour. Place floured mushrooms into the buttermilk.
  2. Coat the mushrooms with buttermilk, shake off excess buttermilk.
  3. Place mushrooms back into the seasoned flour. Shake off excess buttermilk.
  4. Cook mushrooms for 1 to 2 minutes, or until the turn golden brown. Be sure to stir the mushrooms, and flip them over to both sides cook.
  5. Drain mushrooms on a wire rack resting in a bar pan.

Notes

  • If the buttermilk thickens, add a few tablespoons of water to thin it for better coating.
  • Drain fried mushrooms on a wire rack rather than paper towels to keep crispness.
  • Maintain oil temperature at 375°F for optimal frying results.
