Favorite Baked Beans

Favorite Baked Beans combine diced bacon, sweet onion, bell pepper, and garlic with smoky paprika and chipotle chili powder for a rich, savory flavor. These beans are simmered with tangy apple cider vinegar, BBQ sauce, ketchup, mustard, and brown sugar, then baked until bubbly and syrupy. The crisp bacon topping adds texture and smoky notes to this hearty side dish, making it a satisfying accompaniment for barbecues and family dinners.

Description

Favorite Baked Beans bring together ingredients like diced bacon, onion, bell pepper, and garlic cooked gently before spices like smoked paprika and chipotle chili powder are added. The mixture is then blended with apple cider vinegar, BBQ sauce, ketchup, Dijon mustard, and brown sugar to achieve a balanced sweet and tangy profile. Baked beans from the can are stirred in, brought to a boil, and baked in the oven until the sauce thickens and bubbles.

The result is a richly flavored, syrupy bean dish with a depth from the smoky spices and the crisp bacon topping. The baking melds the flavors and caramelizes the sugars for a satisfying texture contrast between soft beans and crispy bacon.

This dish works well as a side for grilled meats or as a hearty, flavorful complement to casual meals. Making it in an oven-safe skillet minimizes cleanup and concentrates the flavors.

You can prepare the beans in advance by cooking then letting them reach room temperature before baking, allowing for convenience without sacrificing flavor.

Ingredients

Servings
  • 2 Bacon diced, sliced
  • 1 sweet onion diced, small
  • 1 bell pepper diced
  • 2 garlic minced, cloves
  • 1 tablespoon smoked paprika
  • 1/4 TO 1/2 teaspoon chipotle chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper freshly cracked
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons BBQ sauce
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 2 (22 ounce) baked beans bush’s Grillin’ Beans preferred
  • 2 lices Bacon optional, for topping

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Heat a large (oven safe, if you don’t want to transfer) skillet over medium-low heat and add the bacon. Cook until it’s brown and crisp and most of the fat is rendered.
  3. Stit in the onion, pepper and garlic. Cook, stirring often, until everything softens, about 5 minutes. Stir in the paprika, chili powder, salt and pepper. Cook for 1 to 2 minutes. Stir in the vinegar, BBQ sauce, ketchup, mustard and brown sugar until combined.
  4. Stir in the baked beans directly from the can. Bring the mixture to a boil, then turn off the heat. I suggest tasting the beans here and adding more salt, pepper or heat if desired. If you'd like, you can lay a few strips of bacon on top of the beans here too!
  5. Place the skillet (or transfer to an oven-safe dish) in the oven and bake for 30 to 35 minutes, or until bubbly and syrup. Remove and let cool slightly before serving.
  6. You can make these ahead of time - cook them in the skillet then let cook to room temperature and cover, placing in the fridge. Bake the next day (or whenever you’re ready!).
  7. These also freeze well!

Notes

  • Adapted from the pioneer woman’s recipe.
  • If desired, lay extra bacon strips on top before baking for added crispness.
  • You can cook the ingredients in an oven-safe skillet to avoid transferring to a baking dish.
  • Allow beans to cool to room temperature before baking if making ahead.
