Favorite Breakfast Cookies

Favorite Breakfast Cookies combine oats, whole wheat flour, seeds, dried fruit, and coconut with warm spices for a hearty cookie that is slightly sweetened with maple syrup and molasses. Oil and almond milk add moisture, while dark chocolate chips provide rich bits of flavor. These cookies bake to a lightly browned, chewy texture suitable for a grab-and-go morning treat.

Description

The recipe starts by mixing dry ingredients including quick-cooking oats, whole wheat or spelt flour, sunflower and pumpkin seeds, dried cranberries or raisins, unsweetened coconut flakes, ground flaxseed, and cinnamon. Separately, liquid ingredients such as maple syrup, molasses, vegetable oil, and almond milk are whisked together and then incorporated into the dry mixture. Dark chocolate chips are folded in last to disperse throughout the dough.

Cookie scoops are placed on parchment-lined baking sheets and flattened lightly before being baked at 325°F until the edges are light golden brown. The texture offers a balance of chewy oats and seeds with sweetness from dried fruit and syrup, plus the occasional bittersweet chocolate bite. This combination creates a filling cookie suitable for breakfast or healthy snacks.

The recipe uses common pantry ingredients and can be varied by swapping dried fruit or seeds as preferred. These cookies keep well and can be prepared in advance for convenient morning options.
