Fennel Salad with Lemon Dressing and Parmesan
Description
This salad starts with finely sliced fennel bulb and red onion, which are tender yet crisp. A dressing of lemon juice and extra virgin olive oil coats the vegetables, enhancing their natural flavors with a clean acidity and smooth mouthfeel. Salt and black pepper add seasoning without overwhelming the freshness. The shaved mixture is arranged carpaccio-style to highlight the delicate slices, then finished with generous amounts of grated Parmesan cheese that adds savory depth and richness alongside the scattered fennel fronds for subtle anise notes.
The salad serves as a cool, tangy complement to richer meats like roast pork, whole roasted chicken, or herb-baked poultry with gravy. It is best served immediately after dressing to preserve the texture as the lemon will slowly draw out moisture from the fennel.
Adjust portions accordingly; one medium fennel suffices for four people as a side. The interplay of crisp vegetables, sharp cheese, and bright lemon dressing makes this salad a versatile, flavorful accompaniment.
Ingredients
- 1 fennel or 2 baby fennels, medium
- 1/2 red onion , shaved or finely sliced
- 2 tbsp lemon juice
- 2 1/2 tbsp extra virgin olive oil , separated
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup Parmesan Cheese , freshly grated
Instructions
- Cut stalks off fennel (save fronds). Shave the fennel and onion using a mandolin, or slice finely.
- Place in a bowl. Add lemon juice and 1 1/2 tbsp olive oil, salt and pepper. Toss.
- Spread out on a plate "carpaccio" style. Drizzle with more olive oil, top with freshly grated parmesan then sprinkle with fennel fronds.
- Serve immediately!
Notes
- Serve the salad immediately after dressing to maintain the fennel's crisp texture as the lemon draws out moisture quickly.
- One medium fennel bulb is sufficient to serve four people as a side salad.
- This refreshing salad pairs well with pork and poultry dishes such as roast pork, whole roast chicken, or herb-baked chicken with gravy.
