Fig and Goat Cheese Bites in Phyllo Cups
Description
This recipe assembles individual portions by spooning goat cheese into frozen phyllo cups arranged on a baking sheet or mini muffin tin. The cups bake at 350°F until they turn golden and the cheese softens, which imparts creamy texture inside the crisp shell. After baking, a small amount of fig jam is added atop each cup to introduce gentle sweetness, complementing the tang of goat cheese. The ratio favors cheese over jam to avoid excessive sweetness.

Ingredients
- 12 phyllo cups frozen
- 12 teaspoon goat cheese soft, chevre
- 6 teaspoon fig jam
Instructions
- Preheat oven to 350°F
- Place phyllo cups in a mini muffin tin or on a baking sheet.
- Add about 1 teaspoon of goat cheese to each phyllo cup. Bake for 10 minutes, or until cups are starting to turn golden and goat cheese is soft.
- Remove from oven and top each cup with about 1/2 teaspoon of fig jam. (I prefer to have more goat cheese than jam in each cup so that it isn't overly sweet.) Serve immediately.

- This recipe scales easily to make any number of bite-sized portions.
