This super simple Fig Salad is vegan, and such a creative and delicious spin on a traditional salad.

Ingredients
- 10 fig halved, large
- 2 tbsp. olive oil
- lemon juice of half
- 1 parsley very finely chopped, large handful, fresh
- 1/4 cup feta cheese vegan or regular
- 1/4 cup walnuts chopped
- 1/2 tsp salt sea salt
- 1/4 tsp black pepper fresh cracked
- chamomile flowers optional, edible, handful
Instructions
- To assemble the salad, simply add the halved figs to a large plate as begin adding the toppings to the salad.
- Drizzle on the oil and lemon. Dust on the walnuts, feta, parsley and seasoning.
- Enjoy!
Notes
- If you don't like walnuts, use pecans or pine nuts!
- If you don't have feta, use another favorite vegan or regular cheese.
