Fig Salad

This super simple Fig Salad is vegan, and such a creative and delicious spin on a traditional salad.

Ingredients

Servings
  • 10 fig halved, large
  • 2 tbsp. olive oil
  • lemon juice of half
  • 1 parsley very finely chopped, large handful, fresh
  • 1/4 cup feta cheese vegan or regular
  • 1/4 cup walnuts chopped
  • 1/2 tsp salt sea salt
  • 1/4 tsp black pepper fresh cracked
  • chamomile flowers optional, edible, handful

Instructions

  1. To assemble the salad, simply add the halved figs to a large plate as begin adding the toppings to the salad.
  2. Drizzle on the oil and lemon.  Dust on the walnuts, feta, parsley and seasoning.
  3. Enjoy!

Notes

  • If you don't like walnuts, use pecans or pine nuts!
  • If you don't have feta, use another favorite vegan or regular cheese.
