Fig Salad with Prosciutto & Arugula
Description
This salad layers a bed of peppery arugula and torn fresh basil leaves with ribbons of salty prosciutto and halved dried figs. Parmesan cheese shaved into thin ribbons adds a nutty, savory component. The combination brings together sweet, salty, and peppery taste elements.
The vinaigrette is made by combining balsamic vinegar, honey, and extra virgin olive oil, which can be shaken in a jar or whisked in a bowl before drizzling over the salad. This dressing adds sweetness and acidity to complement the figs and cope with prosciutto's saltiness.
The salad is served immediately after dressing to preserve the crispness of the greens. Fresh figs may be used, or dried figs can be rehydrated if desired for more softness. Parmesan can be substituted with blue cheese or gorgonzola for a stronger, creamier cheese flavor if preferred.
Ingredients
- 3 cups arugula
- 1 cup basil torn, leaves
- 3 oz prosciutto cut into ribbons
- 1 cup figs halved, dried
- 2 oz Parmesan Cheese shaved into ribbons (use a vegetable peeler)
Vinaigrette
- 3 tablespoon balsamic vinegar
- 2 tablespoon honey
- 1 tablespoon olive oil extra virgin
Instructions
- On a platter, arrange arugula and basil
- scatter prosciutto and figs over the greens
- top with Parmesan
Vinaigrette
- Shake vinegar, honey, and oil in a jar with a lid, or whisk together in a small bowl.

Notes
- Fresh figs provide natural sweetness and texture; dried figs can be rehydrated in water if a softer texture is preferred.
- Substituting Parmesan with blue cheese or gorgonzola offers a stronger cheese profile for those who prefer bolder flavors.
