Fig Salad with Spinach

This fig salad is fresh figs, spinach, goat cheese and candied pecans, all tossed together in a homemade balsamic vinaigrette. A quick and easy side dish that's full of flavor.

Ingredients

Servings

For the Salad

  • 6 cups baby spinach
  • 2 cups figs quartered, fresh
  • 1/2 cup goat cheese crumbled
  • 1/2 cup pecans chopped, candied

For the Dressing

  • 1/3 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 teaspoons shallot minced
  • salt to taste
  • black pepper to taste

Instructions

For the dressing

  1. Place all the dressing ingredients in a small bowl. Whisk well to combine.

For the salad

  1. Place the spinach, figs, goat cheese and candied pecans in a large bowl.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve immediately.

Notes

  • The dressing can be made up to 5 days in advance.
  • You can use any type of fresh figs. My favorite options include black Mission figs, green Kadota figs or striped tiger figs.
