Fire Cider
Description
The Fire Cider recipe starts by placing grated ginger and horseradish roots, chopped onion, crushed garlic, jalapeño peppers, lemon zest and juice, dried rosemary, turmeric powder (or fresh root), and cayenne pepper into a quart jar. Apple cider vinegar is poured in to completely cover the ingredients, and the jar is sealed with parchment paper under the lid to prevent metal contact. It is then stored in a cool, dark place and shaken daily for 4–6 weeks, allowing the flavors and beneficial properties to infuse into the vinegar.
After steeping, the solids are strained out using a fine strainer or cheesecloth, ensuring as much liquid as possible is recovered. Raw honey is added to sweeten and balance the sharpness. The final product combines spicy, sour, herbal, and sweet flavors, often used as a tonic or flavor enhancer.
Optional variations include adding citrus peels or cinnamon to customize the infusion. The removed solids can be repurposed in cooking or composted. This traditional tonic embraces fresh, organic ingredients and an extended infusion method to develop its distinctive flavor and potency.
Ingredients
- ½ cup ginger root freshly peeled and grated, organic
- ½ cup horseradish root freshly grated
- 1 medium onion chopped, organic
- 10 cloves garlic crushed or chopped, organic
- 2 jalapeno pepper chopped, organic
- 1 lemon zest and juice, organic
- 2 Tablespoons rosemary dried leaves
- 1 Tablespoon turmeric powder or 2 Tablespoons freshly grated organic turmeric root
- ¼ teaspoon cayenne pepper powder
- apple cider vinegar organic unfiltered
- ¼ cup honey or to taste, organic raw
Instructions
- Add ginger, horseradish, onion, garlic, jalapeño peppers, lemon zest and juice, rosemary, turmeric and cayenne powder into quart-sized jar.
- Pour apple cider vinegar in the jar until all the ingredients are fully covered and the vinegar reaches the top of the jar. You want to be sure all the ingredients are covered to prevent spoilage.
- Use a piece of natural parchment paper under the lid to keep the vinegar from touching the metal, or use a plastic lid if you have one. Shake jar to combine all the ingredients and store in a dark, cool place for 4-6 weeks, remembering to shake the jar a few seconds every day.
- After one month, use a mesh strainer or cheesecloth to strain out the solids, pouring the vinegar into a clean jar. Be sure to squeeze out as much of the liquid as you can. This stuff is liquid gold! The solids can be used in a stir-fry or you can compost/discard them.
- Add honey to the liquid and stir until incorporated. Taste your fire cider and add more honey if needed until you reach your desired sweetness.
- Store in a sealed container in the refrigerator or in a cold, dark place. Drink 1-2 Tablespoons when needed.
Notes
- Add optional ingredients like cinnamon, orange peel, or grapefruit zest to customize flavor.
- Use natural parchment paper under the lid or a plastic lid to prevent vinegar from touching metal and causing off-flavors.
- Shake the jar briefly each day during the 4–6 week infusion period to mix ingredients.
- After straining, solids can be used in stir-fries or composted instead of discarded.
- Store in a cool, dark place during the steeping period to preserve freshness and flavor.
