Flaky Mile High Biscuits

Flaky Mile High Biscuits are tender, high-rising biscuits made with all-purpose flour, baking powder, baking soda, and plenty of butter. The cold butter is worked into the dry ingredients to create a crumbly texture, then combined with buttermilk to form a soft dough. After cutting into rounds and chilling briefly in the freezer, the biscuits bake to a golden brown with a light, flaky crumb that layers well. Brushing the tops with melted butter adds an extra richness and shine. These biscuits make a classic complement for breakfast or dinner.

Description

Flaky Mile High Biscuits bring together common pantry ingredients like flour, baking leaveners, salted butter, and buttermilk to create large, tender biscuits with distinct layers. The technique of cutting cold butter into the flour creates pockets of fat that steam during baking, helping the biscuits rise and split into tender layers. Chilling the cut biscuits before baking firms the dough, which helps maintain their height in the oven.

The biscuits bake at a high temperature until golden, resulting in a biscuit with a golden crust and tender inside. Brushing the tops with melted butter after baking enhances the flavor and keeps the crust soft. They can be served warm, alongside breakfast items or soups, or split open and filled with jams or gravies.

Ingredients

Servings
  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon baking soda
  • 1 cup butter cut into cubes, unsalted
  • 1 ½ cups buttermilk
  • ¼ cup butter melted, unsalted

Instructions

  1. Preheat oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine flour, baking powder, salt and baking soda.
  3. Add cold butter, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs.
  4. Add buttermilk and stir using a rubber spatula until a soft dough forms.
  5. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. Cut out 10-12 rounds using a 2 1/2-inch biscuit or cookie cutter.
  6. Place biscuits onto the prepared baking sheet; place in the freezer for 15 minutes.
  7. Remove biscuits from freezer and brush tops with butter. Place into oven and bake for 15-18 minutes, or until golden brown.
  8. Serve warm.
