Description

This marinade combines salty soy sauce and tangy cider vinegar with sweet brown sugar and the umami complexity of Worcestershire sauce and Dijon mustard. Olive oil helps distribute flavors and flecks of chopped garlic add pungency. Black pepper provides mild heat.

Marinating flank steak for at least 2 hours allows the flavors to penetrate and helps tenderize the lean cut. Cooking on a medium-high grill for 5-6 minutes per side sears the exterior and retains juiciness inside. Resting the meat covered in foil for 5-10 minutes finishes the process, allowing juices to redistribute.

  • 3/4 cup soy sauce low sodium
  • 1/4 cup olive oil
  • 1/4 cup brown sugar packed
  • 1 tablespoon cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon black pepper ground
  • 2 teaspoons garlic chopped
  • 1 1/2 pounds flank steak

Instructions

  1. Combine the soy sauce, olive oil, brown sugar, cider vinegar, Worcestershire sauce, mustard and pepper in a resealable bag; seal and shake to combine. 
  2. Reserve 2 tablespoons of the marinade for later use. Stir the garlic into the bag of marinade.
  3. Add the steak and marinate for 2-24 hours.
  4. Heat an outdoor grill or stove top grill pan to medium-high. Place the steak on the grill and cook for 5-6 minutes per side, depending on the thickness of your meat and the desired level of doneness.
  5. Remove the meat from grill and cover with foil. Let stand for 5-10 minutes and then slice thinly against the grain with a very sharp knife. Drizzle with reserved marinade, then serve.
