Resting the steak after grilling lets juices redistribute, improving tenderness and juiciness.
Slicing the steak against the grain produces more tender bites. The marinade’s flavor complements the robust meat, making it a suitable choice for outdoor cooking or a flavorful weeknight dinner.
Temperature guidance is provided to reach desired doneness, with resting raising internal temperature slightly. Removing the steak from heat a few degrees before the target helps achieve ideal results.
Ingredients
- 1/2 cup soy sauce
- 1/4 cup olive oil
- 2 tablespoons white vinegar or use apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon honey or use brown sugar
- 1 tablespoon brown mustard or use Dijon mustard, spicy
- 4 cloves garlic minced
- 1 tablespoon hot sauce or more to taste
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon red pepper flakes
- 1 teaspoon oregano dried
- 1/2 teaspoon cumin
- salt to taste
- black pepper to taste
- 1.5 pound flank steak
Instructions
For the Flank Steak Marinade
- Whisk together the soy sauce, olive oil, vinegar, Worcestershire sauce, honey, mustard, garlic, hot sauce and seasonings in a small bowl. Whisk until smooth.
- Add the flank steak to a wide pan or into a large plastic baggie and pour the marinade over it. Be sure to cover the steak. Massage the marinade into the steak with your hands.
- Marinate the flank steak for at least 1 hour, or overnight for more flavor penetration. You can marinate for 24 hours.
For Grilled Flank Steak.
- Heat a grill to medium-high heat and lightly oil the grates.
- Remove the flank steak from the marinade and discard the marinade. Grill the flank steak for 3-4 minutes, then flip and grill another 3-5 minutes, or until done to your desired doneness. See below for temperatures.
- Remove the flank steak from the grill and set onto a plate or cutting board. Cover with aluminum foil and let it rest for 10 minutes.
- Slice against the grain and serve.
Notes
- Grill steak to these internal temperatures for doneness: Rare 125°F, Medium Rare 135°F, Medium 145°F, Medium Well 155°F, Well Done 165°F.
- Remove steak from grill 5°F below the target temperature and rest for 10 minutes to allow carryover cooking.
