Fleischsalat (German Meat Salad)
Description
Traditional Fleischsalat consists of bologna and pickles sliced into thin strips, mixed with mayonnaise, a touch of sugar, and a small amount of tart pickle juice. The salad is seasoned with salt and black pepper to taste. Chilling the mixture for at least two hours allows the flavors to meld and the salad to firm slightly.
The salad’s texture is creamy with crisp bites from the pickles, balancing saltiness from the bologna with a slight tang from the pickle juice and sugar. This combination makes it a distinctive German deli preparation, typically spread on crusty rolls, French bread, baguettes, or artisan breads for sandwiches.
Fleischsalat works well as a flavorful deli-style snack or light meal, offering a contrast of creamy and crunchy components that pair well with fresh bread and simple sides.
