Description
Flourless Banana Oat Waffles combine rolled oats, ripe bananas, eggs, almond milk, vanilla extract, cinnamon, and baking powder into a batter blended until smooth. Letting the batter sit thickens it slightly, improving waffle texture. Cooking on a preheated, greased waffle iron produces waffles with a golden crust and soft centers.
The oats provide structure and a mild nutty flavor while the bananas add natural sweetness and moisture. The cinnamon adds warmth and depth, balanced by the subtle vanilla. These waffles can be topped with fresh fruit or other preferred toppings.
For storage, keep waffles in an airtight container in the refrigerator for up to three days or freeze in ziplock bags for up to three months. Reheating in an oven preserves crispness better than microwaving. Swapping almond milk for other types like oat or dairy milk works well, and quick oats may substitute rolled oats.
Ingredients
- 1 ¾ cups rolled oats gluten-free certified if necessary
- 2 banana medium, spotty
- 2 egg
- ⅔ cup almond milk or 2% milk, whole milk, cashew or oat milk, unsweetened
- 1 teaspoon vanilla extract
- 1 ½ teaspoon cinnamon
- 1 ½ teaspoon baking powder
Instructions
- Add all ingredients to a high-speed blender and blend 30 – 45 seconds until it’s a smooth batter. Let the batter sit for 4 – 6 minutes to thicken while you heat the waffle iron.
- Heat waffle iron and lightly grease with non-stick spray or butter. Once hot, spoon batter into the iron and cook until golden brown and center are cooked through. Tip: The amount of batter and cook time depends on the size and strength of your waffle iron. For best results, follow the time recommended by your waffle maker.
- Repeat until you’ve used all your batter.
- Let waffles sit for 1 - 2 minutes before serving warm with toppings of your choice - I love fresh fruit!
