Ingredients

  • 2 cups all purpose flour
  • ¾ cups granulated sugar
  • 3 ½ tsp baking powder
  • 2 large eggs whites and yolks separated
  • 1 ½ cups whole milk
  • 1 cup salted butter melted
  • 1 tsp pure vanilla extract
  • For garnish: plenty of sliced fresh strawberries powdered sugar, or maple syrup

Instructions

  1. In a bowl, whisk together the flour, sugar, and baking powder.
  2. In a second bowl, lightly beat the egg yolks. Add the milk, butter, and vanilla to the yolks. Mix well until combined.
  3. Stir the yolk mixture into the flour mixture with a rubber spatula, just until combined.
  4. In a separate, clean bowl, use an electric mixer to beat the egg whites until stiff peaks form. Use a rubber spatula to gently fold the egg whites into the waffle batter until just combined. Do not overmix!
  5. Let the batter rest for 10 minutes while you preheat the waffle iron.
  6. Cook the batter in the heated waffle iron according to the manufacturer's instructions, until the waffles are golden.
  7. Serve with fresh strawberries, powdered sugar, or maple syrup.

Notes

  • If you'd like, you can use white whole wheat flour, or a combination of whole wheat and all-purpose flour. 
  • 1 cup butter = 2 sticks.
  • If you prefer your waffles less sweet, use 1/2 cup sugar.
