Fluffy Buckwheat Pancakes

Ingredients

  • 2 egg large
  • 2 cups buttermilk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups buckwheat flour
  • 1/2 tsp baking soda
  • 3 tbsp butter unsalted

Instructions

  1. In a medium bowl, combine eggs, buttermilk, sugar and vanilla extract. Whisk until well combined.
  2. In a separate bowl, combine buckwheat flour and baking soda. Add dry ingredients to the wet ingredients, and mix until just combined.
  3. Preheat a pan over medium heat with a bit of butter. Spoon the batter into the hot pan, and cook until the edges turn golden. Flip the pancakes, and cook until golden brown.
  4. Repeat until you run out of batter and butter. Enjoy the pancakes while warm!
