  • 2 lbs chicken breast approximately 4 breasts
  • 2 bell pepper any color - diced into large pieces
  • 1/2 cup barbecue sauce
  • 2 Tbsp soy sauce
  • 4 lices pineapple fresh or from a can, rings
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a small mix bowl, stir together the barbecue sauce, soy sauce, salt and pepper.
  2. Coat 4 large pieces of heavy duty foil with a non-stick cooking spray. 
  3. Top each piece of foil with a filleted chicken breast.
  4. Top with the pineapple slice and the bell peppers evenly among the 4 foil packs.
  5. Drizzle about a 1/4 cup of barbecue mixture on each chicken foil packet dinner.
  6. Fold up the sides of the foil to make a foil packet.
  7. Place on the grill or campfire for about 20 to 25 minutes until chicken is cooked through and has an internal temperature of at least 165 degrees F.
  8. Carefully open and enjoy!

Notes

  • Foil packet meals can alternatively be baked in the oven at 425°F for 30-35 minutes until chicken is cooked through.
