Foolproof Oven-Baked Kale Chips

These oven-baked kale chips are made from fresh kale leaves rubbed with olive oil and salt, then baked until crispy without browning. The result is a crunchy, light snack offering a crispy texture that works well as a healthy alternative to traditional chips. Optional seasoning blends can be added after baking to vary the flavor. Baking at a low temperature ensures even crisping while preserving the kale's structure.

Description

Foolproof Oven-Baked Kale Chips start with fresh kale torn into bite-sized pieces and coated lightly with olive oil and salt. Baking at 300°F for 8 to 12 minutes crisps the kale without burning it, producing a snack with a satisfying crunch. The massaging of oil into the leaves helps distribute flavor and aids in crisping. Optional seasoning blends like Ranch, Dorito, or Coconut Curry can be sprinkled on after baking to add distinct flavor profiles. Kale chips can be stored in a paper bag or a loosely sealed bag with a paper towel at room temperature for up to a week, and can be crisped again in the oven if needed.

Ingredients

Servings
  • 1 bunch kale about 5 cups, 8-10 oz
  • 1 Tbsp olive oil 15 mL
  • ¼ tsp salt
  • Optional flavorings see notes

Instructions

  1. Prep: Preheat oven to 300°F (150°C). Wash and dry kale. Cut the leaves from the spine, then roughly tear the leaves into bite-sized pieces.
  2. Flavor: Massage oil into the leaves, making sure each piece of kale has a thin coat of oil. Sprinkle with salt and toss to coat. Lay kale in a single layer on a baking sheet, uncurling the leaves as much as possible while keeping them from overlapping too much (you may need two baking sheets).
  3. Cook: Bake for 8 to 12 minutes, keeping a close eye on them after 8 minutes. They’re done when crispy but not brown (will become more crispy as they cool).

Notes

  • After baking, add your choice of seasoning blends to customize flavor.
  • Store chips in a paper or loosely sealed plastic bag lined with a paper towel to keep them crisp for up to a week.
  • If the chips lose their crispness, re-bake them for a few minutes to restore crunch.
  • An air fryer can also be used to make these kale chips with similar results.
