Four Bean Spicy Crockpot Chili

This hearty chili blends spicy Italian sausage and ground turkey with four types of beans and a complex mix of sauces, herbs, and peppers. Slow-cooked in a crockpot, the flavors meld into a rich, layered stew with a balance of heat and tang from peppers, beer, and wine. The dish has a thick, chunky texture from beans and vegetables and is served with traditional toppings like cheese, avocado, and sour cream, offering a filling, warming meal.

Description

Four Bean Spicy Crockpot Chili combines ground spicy Italian sausage and ground turkey browned then slow-cooked with diced tomatoes, four varieties of rinsed beans (cannellini, black, pinto, kidney), and an array of flavorful ingredients including jalapeño, habanero, green chiles, salsa, hot tomato sauce, and chili seasoning. The addition of IPA beer and red wine (or beef broth) lends depth and slight bitterness to the rich tomato base. Garlic, onion, and bell pepper sautéed beforehand add aromatic sweetness.

The slow cooker allows the flavors to develop over several hours, producing a thick, hearty chili with tender meats and softened beans. The heat level is adjustable via optional peppers. When served, the chili is traditionally accompanied by cornbread and garnished with cheese, sour cream, avocado, and red onion, providing creamy, fresh, and crunchy contrasts.

Planning ahead with pre-mixed seasonings can simplify preparation. The recipe is flexible for stove-top cooking and tastes better after a day as flavors meld. Stored properly, leftovers keep well for several days.

Instructions

  1. In a large frying pan, brown sausage and ground turkey with olive oil over medium-high heat. Once cooked, pour into bottom of crockpot/slow cooker. You need at least a 6QT slow cooker for this recipe.
  2. Turn the heat down to medium and sauté the onions and bell pepper for ~5 minutes, stirring occasionally, then add the garlic and stir for ~1 minute or until fragrant.
  3. Transfer to crockpot/slow cooker with the sausage and ground turkey.
  4. Pour all remaining ingredients onto the meat/onion mixture into the clockpot/slow cooker. I know it's a lot of ingredients, but trust me it all comes together and is SO good.
  5. Stir all ingredients together and set the crockpot/slow cooker on low for ~4-6 hours, or on high for ~3-4 hours. Taste and adjust any seasonings as needed.
  6. Serve with corn bread and garnish with cheese, onions, sour cream, avocado or any of your favorite chili toppings. Enjoy!!
