Fra Diavolo Sauce Recipe
Description
This Fra Diavolo Sauce starts with olive oil gently cooking finely chopped onion and optional red pepper until softened, forming a flavorful base. Garlic is added briefly to release its aroma. Crushed tomatoes and their juices combine with red pepper flakes for moderate heat, along with dry white wine and oregano to deepen the sauce’s savory profile. Simmering allows the flavors to blend and develop, creating a bright, somewhat spicy tomato sauce.
Chopped fresh parsley and basil stirred in near the end provide freshness and a mild herbaceousness that balances the sauce's acidity and spice. The resulting sauce pairs well with pasta or seafood such as shrimp, bringing a lively, fiery element to the dish.
The heat level can be adjusted by increasing or decreasing the amount of red pepper flakes and choosing whether to include the optional red pepper. Tasting and adjusting salt completes the seasoning.
Ingredients
- 1 tablespoon olive oil
- 1 onion chopped, small
- 1 red pepper chopped (optional, for extra spicy, spicy
- 4 cloves garlic chopped
- 14 ounce crushed tomatoes or use diced, or fire roasted, canned
- 2 teaspoons red pepper flakes or to taste, spicy
- 1/2 cup white wine dry
- 1/2 teaspoon oregano dried
- salt to taste
- black pepper to taste
- 1 tablespoon parsley chopped
- 6-7 basil chopped, fresh leaves
Instructions
- Heat the oil in a large pan to medium heat. Add the onion and red pepper. Cook them down for 5 minutes to soften.
- Add the garlic and cook for 1 minute, until you can smell that gorgeous garlic.
- Add the crushed tomatoes with their juices, red chili flakes, white wine, oregano and salt and pepper to taste.
- Simmer for 10 minutes (or longer) to let the flavor develop.
- Stir in the parsley and basil leaves. Taste and adjust for salt.
- Serve with pasta or seafood, like Shrimp Fra Diavolo.
Notes
- The sauce has medium heat by default but can be made spicier by adding more chili flakes and fresh hot peppers.
- For a milder sauce, omit the fresh red pepper and reduce chili flakes to 1 teaspoon.
