Description
Freezer Breakfast Burritos start with cooked maple sausage links cut into small pieces, paired with diced sautéed red and green bell peppers and onions cooked to softness but not browned. Soft scrambled eggs prepared with water add a light texture contrasted by the firm sausage. These ingredients are divided evenly and assembled inside large flour tortillas along with shredded cheddar cheese for melting.
The burritos are rolled tightly for holding the filling well and can be frozen for future use, making them practical for busy mornings. The combination of sweet maple sausage and savory vegetables produces a flavor complexity that stays enjoyable even after reheating. The use of flour tortillas accommodates the hearty filling without breaking.
Ingredients
- 14 breakfast sausage links maple
- 1 red bell pepper seeded and diced
- 1 green bell pepper seeded and diced
- 1 medium yellow onion peeled and diced
- 2 tablespoons canola oil divided
- salt to taste
- black pepper to taste
- 2 cups cheddar cheese shredded
- 12 large egg
- 10 flour tortillas burrito-size
Instructions
- Cook the sausage according to package directions. Remove the sausage from the skillet and let it cool on a cutting board. Slice the links into small pieces once cool enough to handle.
- Cook peppers and onions in a skillet with 1 tablespoon canola oil over medium heat. The veggies should be soft but not browned, about 5-7 minutes. Season with salt and pepper to taste. Transfer to a bowl and wipe out the skillet.
- Beat the eggs with 2 tablespoons of water and salt and pepper to taste. Add 1 tablespoon of oil to the same skillet and cook the eggs until they're soft scrambled. (Don't overcook them!)
- To build the burrito: Divide the sausage pieces, veggies, eggs, and cheese into 10 portions. First, put some eggs in the center of a tortilla. Then top with sausage, peppers, and onions and sprinkle with cheese. Roll up the tortilla tucking one end up and over the filling, folding in the sides, and then rolling up into a burrito. Repeat with remaining ingredients. (I usually lay out all 10 tortillas and build these burritos in an assembly line.)
- Freeze the burritos on cookie trays and then wrap them in foil and place in freezer bags.
- When ready to cook, unwrap a burrito from the foil and loosely wrap it in a paper towel. Microwave for 2 minutes or until hot. (Everything is already. The microwave heats up the filling and melts the cheese.) Let your burrito sit for 1 minute before serving.
