Freezer Breakfast Burritos Recipe

These Freezer Breakfast Burritos combine fluffy scrambled eggs with hash browns, browned Italian sausage, crispy bacon, and shredded cheese wrapped in large flour tortillas. The fillings are pre-cooked and assembled before wrapping tightly in foil for freezing. The burritos can be baked from frozen or thawed, providing a convenient, protein-rich hearty breakfast option with a blend of savory meats, tender eggs, and crispy potatoes.

Description

The recipe starts by cooking shredded hash browns in olive oil over high heat until crisped. Separately, eggs are whisked with milk, salt, and pepper, then scrambled until just set, finished by mixing in half a cup of cheese. Ground Italian sausage is browned and drained, and bacon strips are cooked to crisp and chopped. Large flour tortillas are warmed to pliability for assembly.

Portions of hash browns, eggs, sausage, bacon, and shredded cheese are layered onto each tortilla which is then rolled tightly. The burritos are wrapped individually in heavy-duty foil. They can be stored frozen and baked when needed.

Baking times vary depending on whether the burrito is thawed or frozen, with frozen burritos requiring longer baking to heat through completely. Optional toppings like avocado, guacamole, pico de gallo, salsa, hot sauce, tomato slices, or cilantro can be added when serving for fresh contrasts.

Instructions

Prep the hash browns

  1. In a large skillet over high heat, add hash browns. Drizzle with oil and season generously with salt and pepper. Cook for 6-10 minutes, stirring occasionally, til crispy. Set aside.

Prep the eggs

  1. In a medium bowl whisk together eggs, milk, and salt and pepper to taste. Add to a greased skillet and stir occasionally over medium heat for 6-8 minutes until mostly cooked. Stir in 1/2 cup cheese. Set eggs aside.

Prep the sausage

  1. Cook sausage in a large skillet over high heat, breaking up with a spoon or spatula, about 8-10 minutes until browned. Set aside.

Prep the bacon

  1. Cook bacon until crispy. Roughly chop and set aside.

Assemble Burritos

  1. Microwave your tortillas for 20-30 seconds until warm and pliable. Assemble burritos by portioning out the hash browns, eggs, sausage, bacon, and cheese into the center of each tortilla. Roll the burritos tightly.
  2. Place each burrito in the center of a piece of foil. Fold the ends of the foil over the burrito, then roll tightly. Place in a ziploc bag, press out excess air, and seal the bag. Freeze until ready to use.

Reheat and serve

  1. When ready to use, bake burritos wrapped in the foil, in a preheated oven at 400 degrees for 12-15 minutes. Unwrap and garnish with any desired toppings and enjoy!

Notes

  • Bake thawed burritos for the recommended time; if baking from frozen, increase baking time to 30-40 minutes to ensure they are heated through.
